Fajitas are a traditional south-western dish created by the range cowboys when they learned to marinate pieces of beef before cooking it over an open fire. The beef was cut into strips and rolled inside tortillas.
We create this authentic taste of the southwest by seasoning specially trimmed skirt steak overnight and then broiling it over red hot Mesquite. We serve a pound of sizzling fajitas over onions with cheddar cheese, pico de gallo and sour cream. Plenty of fresh flour tortillas are provided for creating your favorite combination.
